iRobot Roomba cleaning the RV

We had the opportunity recently to try vacuuming our RV with the iRobot Roomba Pet Series vacuum cleaner.  And, it was pretty amazing.  It can detect stairs, and it won't get caught on rug fringes.  It worked really well detecting and vacuuming our floor mat as well.  We definitely recommend it for Rvers because it will take care of all of the crevices and the iRobot is very small and compact.  It can also be set to automatically vacuum at a set time every day.

There are other models out there.  Another one is the iTouchless Robotic Intelligent Floor Vac.  We would NOT recommend that one.  It eats rug fringes and also tends to get stuck on chair legs.  It's not very intelligent.

Chad's Lemon Spinach Sauté

Chad's Lemon Spinach Sauté

1 1/2 lemons, juiced (1/2 cup lemon juice)
1.5 lbs spinach
1/3 cup Goat cheese
1 1/2 T olive oil
1/3 stick of butter
1/4 Cup water
1 1/8 teaspoon Garlic powder
1 teaspoon Dill weed
1/8 teaspoon Black pepper 
1/4 teaspoon Salt
1 Tablespoon gluten free flour 

Heat butter oil & water in a saucepan over medium heat.
Add 1/2 the spinach when the butter is melted.

Add lemon juice, garlic powder, dill, black pepper,& salt.
Stir & cook down. (About two min)
Add goat cheese & stir until the cheese is melted and distributed evenly.

Increase the heat to high and add the remaining spinach. Stir to coat the leaves in the juice.
Sauté for about two minutes.

Remove from heat. Add 1 tablespoon gluten free flour and stir to thicken the sauce.

Chad's Quick & Easy Gluten Free Lasagna

Chad's Quick & Easy Gluten Free Lasagna


Chad's marinara sauce (Click here for the recipe.)
1 10 oz. package Brown Rice Pasta (Tinkyaka brand worked really well.)
1 pint seasoned mozzarella balls
15 oz. ricotta cheese
About 2 lb. frozen ground beef (It will be faster to prepare if it is thawed.)
1 large white onion
Salt & pepper to taste

1st step - Make the marinara sauce according to the recipe.  The marinara sauce can be made the day before which also gives the flavors a chance to marinate.

2nd step - Cook the brown rice pasta according to the directions on the package.

3rd step - Add the frozen ground beef to a saucepan or stock pot over high heat.

4th step - Dice the onion.

5th step - Add the onion to the ground beef and sauté with the beef until the beef is fully cooked.  Add salt & pepper to taste.

6th step - In a baking dish, layer the marinara sauce, pasta, ricotta cheese, beef, & mozzarella balls in any order you wish.  Make sure you have mozzarella balls on the top layer.

7th step - Pour the seasoning from the mozzarella balls over the top of the lasagna for extra flavoring.

8th step -  Add the lasagna to a preheated oven and cook at 350 degrees F for 30-45 minutes.

Good price for propane - Quinlan Gas - Poughkeepsie, NY

For those of you in the Poughkeepsie, NY area.....We found a really good price for propaneQuinlan Gas, Inc. will refill your small BBQ propane tanks for $10 each.  This ends up being about 1/2 the price that most other places in the area charge because they don't exchange the tank.  They refill your tank and we noticed that our tank had more propane in it than we had been getting when we exchanged it.

Gluten-Free Chocolate Coconut Macaroons

Don't these look absolutely delicious?  Well, they are!  I found this recipe on a friend's website.  They are a delicious, fun gluten free dessert to make.  Click here for the recipe.

I didn't have any cupcake wrappers, so I wrapped mine in wax paperThey made cute little sachets.  I also substituted xylitol for the white sugar and I used an unsweetened chocolate bar for the melted chocolate, sweetening it with xylitol as well.  I shared them with some of my friends who also eat gluten free and they loved them.  Let us know what you think.

Winter Storm Thor in the RV

Well, Winter Storm Thor raged through the south bringing us rain, freezing rain, sleet, & snow here in central Virginia.  We ended up with about 4 inches of snow.  We are pretty certain these storms are just following us - if we went to Florida, they would probably get snow down there lol.  Fortunately, the temperatures are rising - yesterday was sunny and 50 degrees F.  Today is supposed to be 60F.  So, the snow won't be here long.

Gluten Free Chicken Cutlet

Gluten Free Chicken Cutlet

2 lb. skinless, boneless chicken breasts
6 oz. gluten free bread crumbs
1 Cup brown rice flour (You could also use coconut flour to give it a slightly sweet flavor)
6 eggs
1 Tablespoon garlic powder
2 Tablespoons + 1/2 teaspoon salt 
4 Tablespoons water
Canola oil

Optional Step to add more flavor to the chicken and to make the chicken more juicy - Soak the chicken in 2 Tablespoons of salt for 15 min. to brine it.  (This can also be a good way to thaw it if the chicken is frozen.  Just soak it longer until it is thawed.)

 Beat the chicken with a meat tenderizer so until the pieces are 1/4 inch thick.

Mix 1/2 Cup brown rice flour, 1 Tablespoons garlic powder, and 1/2 tsp. salt
Coat the chicken in the mixture, one piece at a time. 

Beat 6 eggs and 4 Tablespoons of water to make an egg wash.  Coat each piece of chicken in the egg wash.

Mix 6 oz. gluten free bread crumbs with 1/2 Cup brown rice flour.  Coat the chicken in the bread crumb mixture.

Add oil to a saucepan until it is covering the bottom of the pot 1/2 inch.  Heat the oil over very high heat.  We use two burners to get the heat high enough in our RV.  You will know that the oil is hot enough if you sprinkle water into the oil and it sizzles up out of the pot.

When the oil is hot enough, add a piece of chicken to the pot.  Fry 1 minute per side.  You will see the chicken turn white when it is fully cooked.

Repeat the process for each piece of chicken - coat with the flour, egg wash, and then the bread crumb mixture.  Then fry to a golden brown.
Enjoy with freshly squeezed lemon juice.
