Grilled Lobsters

Grilled Lobsters

Fresh Live Lobster - as many as you'd like
1 bulb of garlic, minced
2 sticks of butter

Par-boil the lobsters in a large saucepan.  Bring the water to a boil.  Add enough water to cover the lobster.  When the water is boiling, add the live lobster.  Boil for 5 minutes.  Remove from heat.

Crush and mince the garlic.  Put in a saucepan.  Add the butter in a saucepan and melt over medium-low heat.  Stir to saute the garlic while the butter is melting.

 Cut the lobsters in half and brush the garlic butter over the meat inside.

Put the lobster on a hot grill. Brush them with garlic butter.  Grill for 5-8 minutes, or until they are fully cooked.  Brush them again with the garlic butter.

Caramelized Onions

Caramelized Onions

Caramelized onions are very sweet and good with just about everything.

1 large onion
1/2 stick butter

Cut the onion in half and then slice.

Melt the butter in a saucepan over high heat.  Separate all of the slices of onion and place in the melted butter.

Saute the onions, stirring every few minutes.  They will become transparent and then start to brown.  Continue to saute for about 20-25 min until they turn completely brown.  They will not burn; this is how they caramelize and will taste sweet.

Serve with burgers, steak, chicken, etc.  They taste delicious with just about everything.

Goodbye to New York

Our RV Life takes us back on the road again....back down to VA.  We had a nice time in NY with family and friends, but we decided to head back to VA for a while.  We arrived and are busy getting situated now.  We brought all of Chad's mechanic tools down with us.

We wanted to share some pictures we took while in NY.  When we left, Spring was in full bloom and everything was so green and beautiful.

Justin's Dynamic Gluten Free Chili

Justin's Dynamic Gluten Free Chili

Chad's brother, Justin makes the best chili.  So, I was thrilled when he was so kind to spend an evening with us to document his recipe to share with y'all.  :-)

3 lb ground beef (80% lean, 20% fat)
1/2 head of garlic (6-8 cloves) 
1 large or 2 medium onions, diced
3 - 4 peppers, diced (can use a mixture of yellow, green, red, or , orange)
1-2 large fresh tomatoes, diced

2 Tablespoons olive oil
1 1/2-2 bottles gluten free beer (Justin uses Red Bridge Beer)
1- 15.5 oz. can black beans
1-19 oz. can kidney beans 
 1/2 cup chili powder
1/4 cup paprika
1/16 tsp. McCormick cayenne pepper in a glass jar (If your cayenne is in a plastic jar, it will
likely be less potent.) Add more if you like your chili spicy.
2 Tbsp. Cumin
1 Tbsp. salt to taste
Dash Black pepper to taste
Dash Oregano
Dash Thyme
1 Tbsp dried Cilantro
1 drop Dave's Insanity Hot Sauce

1/2 cup of jasmine rice or white rice
24 ozs grated cheddar cheese
24 ozs. sour cream
1 diced red onion
1. In lieu of the spices, you can use 4 packets of taco/chili seasoning (make sure it's gluten free) + 1 tsp. cumin
2. Add pancetta or pepperoni. 
3. Cook in a crock pot.
4. Use dried beans.  (Will take longer to cook.) 
5. Add some cocoa or carob powder for added richness.

Chop and prepare the vegetables.  (This could be done ahead of time.)

Saute veggies & garlic in a stock pot over medium-high heat until the vegetables are soft. (About 15-20 min) with 2 Tbsp olive oil.

Add 1 can black beans & 1 can kidney beans simmer for 5-10 min. 

Add 1 1/2-2 bottles (18-24 oz) of gluten free beer.

When the beer is warm, add the beef. Separate the beef with a wooden spoon until it
becomes a fine texture. The mixture should have a lot of liquid. 

Add all seasonings and stir.

Add 1/2 cup of rice and simmer for 1 hour, stirring occasionally.

Personalize Your Rig

It seems that most RVers name their rig.  We have been taking time to come up with a name for ours, but we've finally decided on "The Old Battleship".  Yes, our rig is old, and it is a powerful tool and seems to just keep on going.  It steams along on the highway, just like a big battleship.

Camping in the Adirondacks

Camping in the Adirondacks

This past weekend, our RV life took us on a road trip up to the Adirondacks for a little recreation and relaxation.  We love it up there and also have many great memories there from our honeymoon.  You may also remember that our first trip in the RV was to the Adirondacks.

We always have fun riding ATV trails.  It's so beautiful.  Here are a few creeks that cross the trails there.

The weather was absolutely beautiful, actually the warmest it's been since we came back up north.  Sunday & Monday it was 80 degrees.  However, there aren't any flowers blooming yet up there.  In fact, we still saw some snow along the side of the roads and on the tops of the mountains.

We boondocked (drycamped) for the entire weekend.  We did borrow a generator though and used it to charge our batteries.  We still need to get ours running good.

The RV is running super good.  We did our first oil change before this trip; it's hard to believe we've already driven it 3,000 miles.  We've also done some more maintenance on it recently, which has helped a lot.  More about that later...

Chad's Grilled Marinated Chicken (Gluten Free)

Chad's Grilled Marinated Chicken (Gluten Free)

We made this grilled chicken on our recent camping trip to the Adirondacks.  This recipe will make a lot of chicken for a party.  Or, you can cut the recipe in 1/2.
8 lbs. chicken (legs, thighs, breasts with the bone in - cut in half)

1/4 cup Bourbon 
1 cup Four Brothers Greek dressing (or, a Greek Salad dressing)
1/2 cup Pineapple juice
1/2 cup Olive oil
1/2 Tbsp Salt
1/2 tsp pepper
1/2 Tbsp Garlic powder
1/8 cup Soy sauce (gluten free) We like Braggs Liquid Aminos or Tamari soy sauce
1/2 cup Lemon juice (3 small lemons)
1/2 - 1 Tbsp Hot sauce - El Yucateco Habenero
White cooking wine 1/4 cup
1/4 cup juice from a jar of Pepperoncini peppers
1 Tbsp honey

Mix all the ingredients together in a bowl.

Prepare the chicken in a tray or bowl and cover the chicken with the marinade.  Let sit for 3 hours.

Place the chicken on a hot grille and drizzle with olive oil.

This will create flames which creates a really good flavor.

Cook, flipping often, until the chicken reaches an internal temperature of 165 degrees F (at least 10-15 min per side).  Pour the marinade over the chicken as it cooks.
