Chad's Lemon Spinach Sauté

Chad's Lemon Spinach Sauté

1 1/2 lemons, juiced (1/2 cup lemon juice)
1.5 lbs spinach
1/3 cup Goat cheese
1 1/2 T olive oil
1/3 stick of butter
1/4 Cup water
1 1/8 teaspoon Garlic powder
1 teaspoon Dill weed
1/8 teaspoon Black pepper 
1/4 teaspoon Salt
1 Tablespoon gluten free flour 

Heat butter oil & water in a saucepan over medium heat.
Add 1/2 the spinach when the butter is melted.

Add lemon juice, garlic powder, dill, black pepper,& salt.
Stir & cook down. (About two min)
Add goat cheese & stir until the cheese is melted and distributed evenly.

Increase the heat to high and add the remaining spinach. Stir to coat the leaves in the juice.
Sauté for about two minutes.

Remove from heat. Add 1 tablespoon gluten free flour and stir to thicken the sauce.
