Chad's Gluten Free Macaroni & Cheese Recipe

Chad's Gluten Free Macaroni & Cheese

This recipe has a rich, smoky flavor.  If you'd like it spicy, just add jalapeno and/or cayenne pepper.

1 T. Coarse salt
3/4 stick of Butter
4 oz. Sharp White Cheddar Cheese
4 oz. Smoked Gouda 
2 T. Garbanzo Bean Flour (Bob's Red Mill - Garbanzo Bean Flour Stone Ground - 16 oz.)
1 C. milk or cream
5-6 strips of bacon 
paprika
black pepper 
shredded Parmesan cheese


Bring 6 quarts of water to a boil, adding 1 T. of Coarse salt to the water


Grate the cheddar and gouda cheese.  Set aside.


Fry the 5-6 strips of bacon in a separate pan.  


Cut the bacon into chunks.

 
Melt 3/4 stick of butter in a medium saucepan over medium heat.


Add 2 Tablespoons of Garbanzo bean flour to the melted butter and stir with a whisk.



Cook, continuing to stir with the whisk until it is just starting to brown.



Add 1 C. of milk or cream and whisk.  Remove from heat.



Add noodles to the boiling water and cook for 7-9 minutes.



While the noodles are cooking, heat the melted butter mixture over high heat.  It will start to bubble.  Continue to whisk for about 30 seconds.  You want the mixture to be hot enough to melt the cheese.  Slowly add the cheese and whisk.  


If it is getting too
thick, add more milk or cream.  Remove from heat once the cheese is melted.  Mix the bacon into the melted cheese mixture.


Sprinkle with paprika & black pepper.  If you'd like it spicy, add cayenne pepper and/or diced jalapeno pepper.


Drain the pasta.  Add desired amount of pasta to a bowl and pour cheese sauce over it and stir.


Top it off with shredded Parmesan cheese.

Goodbye to Groton

Well, today our RV life brings us back to the Hudson Valley.  We had a really nice time in Groton.  Yesterday evening we had a good trip back.  The RV drives much smoother now that we have the new tires.  It was also our first time to actually travel in the dark. We also stopped on the way back and filled the RV propane tank.  It holds over 17 gallons, which is about the equivalent of 6 smaller tanks.

How to Install an AC LED Flushmount Light Fixture in an RV

As we mentioned before, the lights in the front section of the RV on the left side didn't work, so we removed those fixtures.  But, up until now, it has been really dark in the front.  So, to solve that problem, we decided to install an AC powered flushmount LED light.  It uses 25 watts of power, so we can actually plug it into our inverter when we don't have an electricity.

Here's how to install....

We started with the existing hole in the ceiling where the previous fixture was installed.

 
Chad actually had to cut the hole a little bigger to allow the recess to fit the bracket.
Next, he screwed the bracket to the ceiling.

Next, he cut an electric cord from an extension cord.  (SlimLine 2235 Flat Plug Extension Cord, 2-Wire, White, 3-FootThen, he used wire nuts to attach the wires together.

 Next, he mounted the fixture to the ceiling.
 
Last step....Plug it in.


And, Voilà...We have light.

Lobsters in the RV

So, can you really cook anything in an RV?  We believe you can!  And, we demonstrate that with lobsters.  We were hoping to make it up to Maine this year (which is where we got engaged), but we haven't been able to...So, when lobster went down to $6.99/lb here, we couldn't resist.  

We used two burners to keep the water super hot.
So delicious!  And, brings back memories of Maine. :-)

How to get an RV out of the mud

What's the latest adventure in our RV life?  Last night, we got stuck.  It has been really rainy here all week.  So, the ground is soft.  So, we pulled into our normal spot to fill up and dump.  And, when we went to leave, we got stuck.  The back wheels were just spinning.


So, we hooked up a chain to the RV...
 

...and to the front of the truck.
 

Chad got in the truck to pull while I put the RV in reverse and gave it gas.  And, sure enough, it slid right out of the mud with no problem.

I couldn't get a really good picture last night because it was so dark, but I did take this picture today of the area where we were.

 
 

Chad's Gluten Free Cabbage Stir Fry Recipe

Chad's Gluten Free Cabbage Stir Fry

1-1/2 lbs. Chopped Beef Stew Meat 
1/2 C. Oil
1/2 Bulb of Garlic (to suit taste)
1 med. White Onion
16 oz. package Baby Bella Mushrooms
1/2 Green Pepper
12 Baby Carrots (or 2 regular carrots)
1/2 Cabbage Head 
2 T. Gluten Free Soy Sauce (We like Liquid Aminos 16 oz. 16 Ounces )

 Sprinkle the meat with salt & pepper.  Heat 1 T. of oil in a saucepan. Add the meat.



Stir constantly, until it's medium (still red on the inside), about 5 minutes.  Set aside. 

Peel the garlic cloves & thinly slice.  

Slice the onion into 1/4 inch thick slices.  


Add 1/2 C. of oil to a large saucepan.  Heat over medium high heat.  Add the garlic & onion and stir to coat in the oil.  


Cook until they start to brown (about 8 minutes), stirring every couple minutes.  

Slice the mushrooms, green pepper, & carrots into 1/4 inch thick slices.



Add to stir fry mixture.  


Cook for about 10 minutes over high heat, until all the vegetables are soft.  Stir every couple minutes.  


In the RV, we straddle two burners so the heat will be high enough.  Also, in an RV, you may need to rotate the pan 180 degrees every couple minutes so the vegetables will cook evenly.  

Chop up the cabbage into 2 inch long strips.



Add the cabbage to the stir fry mixture.  Sprinkle with salt.  


Cook for about 7 minutes, stirring constantly, until the cabbage is cooked to desired crispness.  Add about 2 T. of gluten free soy sauce.

Add the stew beef. 
 

Stir to finish cooking, another couple minutes.  Add additional soy sauce to taste.
