Colors of Autumn

Well, sure enough, we woke up in the RV to sleet and freezing rain this morning.  But, we are staying warm and cozy.

The trees have been so pretty this year.  Here are some pictures from our RV travels.  The colors are amazing.

My cousin actually took this picture from the air before she landed in the airport.

Today's RV location

Today our RV life takes us to yet another location.  lol  This is our fourth spot on this property so far.  Here we have full power & wifi, but no sewer or water.  But, we don't have to go far, just about 500 ft., to sewer & water.  We moved again because the forecast is calling for snow tonight!  Can you believe it?!  In this spot we can use our electric heaters if we need to.
Today's Spot
Here is where we boondocked (a.k.a. dry camping - refers to camping without hookups) last night.  It was quite the beautiful view to wake up to this morning.

Last night, Chad checked out the brakes and added brake fluid.  Today we took the RV for a test drive and the brakes are working fine now.  We will just have to check the fluid levels more frequently.

And, this is interesting - we tried out our internal propane tank again today.  The burners on the stove lit.  So, we do still have propane in the big tank.  We are not exactly sure what's up with that.  So, for now, we are connected to the internal tank....will see how long it lasts.

Today we also entertained our first guest in the RV with a cup of tea.  My cousin, who lives in the area, came by to visit.

New Tires

This has been quite the busy evening in our RV life.  We are here working on a land surveying project, so we worked all day and this evening the fun began.  Chad actually went to pick up our new tires this afternoon.  Tires plural?  Yes, we ended up getting four new tires.  Well, we had our first tire blowout on the way here.  This incident reinforced the fact that we really needed to replace our spare tire.  And, then, Chad researched the two front tires and found out that they were from 1997.  So, we thought it was best to go ahead and replace them as well.  So, this evening Chad had to put the new tires on.  So, now we have a total of 4 brand new tires and 3 that we had previously purchased.

Then, he also took a look at the brakes going to the floor.  (More about that later.)  And, it has been five days since we had hookups, so our water tank was empty.  And, our rinse & waste water tanks were full.  So, Chad filled the water tank and emptied the other tanks.

Next, we moved to a new location.  Here we are boondocking or dry camping (without hookups).  When we got to the new location, we tried to light the hot water heater and realized that our propane tank was empty.  Our gauge shows that it is still full.  So, apparently, the gauge doesn't work.  It's a really good thing that we have an external tank!  Unfortunately, it is almost empty.  So, we will be in search of propane tomorrow.

Chad's Gluten Free Pasta with Gluten Free Clam Sauce

Chad's Gluten Free Pasta with Gluten Free Clam Sauce

 Ingredients
6-10 cloves of garlic
1T Coarse Salt
1 Stick of butter
Juice of 1 lemon (about 3 Tablespoons)
4 - 6.5 oz.cans of clams (fresh is even better)
1/4 C. White Wine
1/4 C. Heavy Cream
1/3 C. Dried Parsley
6T Coconut flour (adds a sweet flavor) or another option is 2TGarbanzo Bean Flour
paprika (optional)

Tinkyada Brown Rice Pasta, Penne, 16 Oz we used for this recipe

Take 6-10 cloves of garlic and cut the ends off.

Next, put them in a bowl and put another bowl on top & shake to peel the garlic.

Bring 4.5 quarts of water to a boil to cook the brown rice pasta.  Add a tablespoon of Coarse salt to the water.

Slice the garlic cloves, and add about 2 tablespoons of olive oil to a saucepan.  Sauté the garlic over medium heat until it starts to brown.

Add the butter and lemon juice.  Continue to stir.  Once the butter is melted, add the 4 cans of clams, white wine, heavy cream, & dried parsley to the saucepan.  Add salt & pepper to taste.

Add 6T Coconut Flour or 2T Garbanzo Bean Flour.  Be careful not to add too much because it will change the flavor.  The flour binds all the ingredients together.

Once the water starts to boil, add the pasta.

Cook the pasta on medium-high for 13-14 minutes or until desired tenderness is reached.  Rinse with cold water and drain well. Spoon your pasta into a bowl & pour your clam sauce over it.  By the way, this tastes even better when served the next day.

Gluten Free Friday's

Chad has been perfecting his gluten free cooking skills for quite some time now.  So, we will post a gluten free recipe every Friday.  It's gluten free in the RV.  :-) Bon appétit!

Our First Tire Blowout

Today our RV life brings us up to Groton, NY in the Finger Lakes Region.  It was a beautiful 5 hour drive here.  We even stopped at a rest area half way and made ourselves tea & coffee.  Gotta love it.  :-)  About 3/4 of the way here, a tractor trailer truck passed us that had a flat tire.  We tried to keep our distance from it, but when his tire blew, the pieces were all over the road.  So, we couldn't help running over some of the steel cords.  And, of course, 15 miles later, BOOM! one of our tires blew out.  The RV was still running fine, though.  We couldn't even tell by the way it drove.  So, we made it to our destination just fine.  Also, having a problem with the brakes going to the floor that we will need to check out.

Here's some pics from our trip today.  The trees were breathtakingly beautiful.  The pictures really can't do it justice.  Will share more pics later of the trees....

Never be cold again

What's the secret to full time RV living during the winter time?  Do what you need to do to stay warm.  So, last night we decided to try out our brand new electric blanket that Chad's parents bought for us.  And, it's wonderful!  We each have our own controller.  So, if we ever get cold during the night we can just turn it on.  Last night, it was supposed to be around 34 degrees.  So, we didn't turn the heat on until we got up this morning.  Including the electric blanket, we had 5 blankets on the bed and we were warm and cozy all night long.  It will soon be getting much colder than this, but we should be fine.  Even if we don't have electricity for some reason, the electric blanket can run off of our inverter.  So, we should never be cold again.  :-)
